Company is Coming

This weekend was something to look forward to indeed!  My friend from North Carolina came in for a quick visit and we spent the day enjoying some fellowship and good food.  We had some fantastic tomato basil soup and pizza's from a Italian restaurant.  We shopped some and then had ice cream at Cold Stone Creamery!  :)  Delish!!!  It was medicine for my soul to see her and spend time with her, it has been over a year since we have been able to spend time together in person.  Thankfully we can share time over the phone everyday, but it's not the same as "in person".

And of course, Sunday was Easter and it was an amazing time for my husband I to spend with my mom and with our boys and with my youngest son's girlfriend Taylor!

Hash Brown Casserole
Fancy Green Beans
Corn

It was yum! 
 
 
Here's my mom's Easter Pie recipe:
 
 

Easter Pie




2 tbsp. corn meal
2 tbsp. flour
2 cups sugar
4 eggs beaten
1 stick butter
1 can crushed pineapple
1 sm can flacked coconut
 
Mix all ingredients together and bake in an unbaked pie shell for 1 hour @ 350.  Cool and serve!
 
 

AND we enjoyed this recipe from a work associate and friend from my short career in the eye care business.

Green Beans on the Sweet Side
 
4 cans long green beans
1/2 pkg bacon, chopped
1 small onion, chopped fine
1 cup brown sugar
garlic salt
 
Put drained green beans into crockpot.  In skillet cook bacon and onions until almost cooked, add to crockpot along with brown sugar, salt and about 1 cup water.  Cook two to three hours on low and serve.

Time with Lisa

A friend from my youth and I have had the opportunity to reunite after lots of years apart!  And now for the past 3 or so years we have spent at least one Saturday out of every month together.  It has been a blessing that has enriched my soul!  It's like we've never been apart, but yet so much is different we realize the years that have flown. 

Much to my delight I spent this past Saturday with my friend and I made her breakfast and as it has become our custom exchanged a gift.  As I prepared for this special day, I picked up and cleaned my house as best as I could on the time I had to do so, and I made "Sausage Egg Casserole" a recipe from another friend from my decorating years.  This gave me double joy as I had memories of that friend flooding my mind with elegant times spent in her home on many occasions enjoying her gracious hospitality!  

As much as can be possible the time spent with friends can never be wasted, nor the time spent with family.  Keep up with those you love and spend precious moments every chance you get and make time when you need too!  We never know what tomorrow holds for us or for those we love!

 

Sausage Egg Casserole

 

1 lb cooked sausage

2 c milk

1 tsp mustard

1 c grated cheddar cheese

6 eggs slightly beaten

1 tsp garlic salt

2 slices day old bread crushed

3 tbsp. chopped onion

 

Mix together all ingredients place in a 9 x 13 casserole dish and let set overnight in refrigerator.  Bake at 350 for approximately 45 minutes.  Cool slightly and serve.

Food & Friends

Ham & Potato Casserole

 
3 - 4 med. potatoes
 
2 c. chopped ham
 
1 Tbsp. minced onions
 
1 tsp salt
 
dash of pepper
 
2 Tbsp. margarine
 
2 Tbsp. cornstarch
 
2 1/2 c. milk
 
1/2 c. grated cheese
 
 
Pare & slice potatoes.  Boil for a few minutes.  Drain potatoes and mix in casserole dish with ham, and minced onions.  Add salt and pepper to margarine and cornstarch and milk to make a white sauce.  Pour sauce over potatoes and ham.  Sprinkle cheese on top.  Bake @ 325 for 30 min.
 
 
I made this recipe this weekend...and all I could think about was my dear friend Elyssa Clayton.  She gave me this recipe.  My friend had me over to her home for a special luncheon for just the two of us.  This is where my love of pink peppermint ice cream comes in; you see, she prepared this wonderful dish with love and shared a meal with me.  How precious is food shared with friends!
 
Because of this sweet gift, it has blessed me many times over!  Every time I make it and share it with family or friends, I'm transported to the wonderful time we spent together and she is with me in my heart and soul and mind!   Love you Elyssa!
